OT dried Okra

I have pickeled a lot of it but never dried, I don't see the appeal because okra is not palatable hard or woody as in when the pods get too big or over mature or naturally dry on the vine. As far as it goes, you can dry anything with a dehydrator or in the hot dry sun.

A chain of high end grocery store called The Fresh Market sells dried Okra and quite a bit of it actually. It's pretty good despite Okras reputation. From what I gather whoever does it for them uses a vacuum dessication process as part of the drying process. The pods wind up being rather brittle and crunchy if that makes sense.

My wife sliced it into (approx) 1/4" thick slices, then dried it in her dehydrator. Good stuff, either as a snack, or in soup.
