My friends wife gave me a gallon of goats milk,and a recipe to make cheese.I took a few pictures along the way.Heated the milk to 185 put in 3 tbs of vinegar,and strain it in a cheesecloth add salt or herbs after 6 to 8 hrs of hanging to drain,Ill let you know how it turns out!

If you find out how to make cottage cheese,let me know. You just can't buy good stuff anymore. Everybody has gone to low fat,sea salt or some stupid thing that ruins it. I could eat GOOD cottage cheese before I'd take ice cream.
 
I followed a similar recipe, turned out excellent. Instead of hanging to drain, I pressed out the liquid through a colander. I used Vitamin D milk and added a quart of buttermilk.

The recipe I have calls it Farmers Cheese. Tastes like a very mild mozzarella.

You will love it, quick and easy to make, and tasty.

spring goat milk isnt all that bad. cheese is looking good larry, ill get you an invite to come visit my brother he is a master cheese maker and was working in nj for a few yrs consulting for a big operation in secaucus. he's now running his own cheese company.
