O/T Fried Mush

I'm getting ready to fry up the last of my corn meal mush. I cut it thin and fry it on a griddle and season with salt and pepper. Anybody else a mush lover?

fergienewbee,

Did not know one could slice it...always assumed it was "mushy". Googled images of it and it looks pretty good (not heart healthy...but tasty looking for an occassional weekend breakfast).

Going to have to try it if I can get it around here... or will have to make my own.

We always had cornbread. Mom called in Johnny Cake (not sure why).

Link to google images if anyone wants to take a look.
fried mush

Yep, sure do. My mom used to make it when we were kids, ate the mush with milk & sugar then the next day she would fry it. Wife buys it in tubes now & frys it for me & the grandkids. You can also get it at the Bob Evans Restraunts.

my grandma used to make that! havent had it in years but remember it was a treat to have (of course anything from grandma was a treat!)

I love it, most Bob Evans restaurants still carry it. You have to ask because it is not on the menu.

Yes I like it - in fact I picked up some corn meal Tuesday on my weekly shopping trip. Mom used to roll it in flour before frying.

As a side note the restaurant across the highway from Polks Auction used to serve it. They have not had it on their sign for a while - don't know if they still serve it.

We had mush when I was a kid. Mom would make it the night before on cookie sheets and let it set out all night. The next morning she sliced into squares and fried it in some grease from the homemade pork sausage. I would eat it with a little bit of butter and maple syrup on it. That was the good old days!

Yup had some a short time ago with homemade sorgum from the Amish fried in butter. Beef gravy doesent hurt it also.

I love mush. But its getting difficult to find in restaurants anymore. At the Elnore Indiana show they serve it at the church stand.
Does anyone like Buckwheat pancakes?

I have not had any in over fifty years. Grandma use to make it , my mom hated it and i once brought the subject up with the War Dept. and i only did that one time .

Sweetfeet;

I use the recipe on the box of Quaker's corn meal. Four cups of water, tsp salt and 1 cup cornmeal. Bring 3 cups of water to a boil. Comine the salt, cornmeal and 1 remaining cup of water and pour slowly into boiling water, stiring constantly. Cook until thick--think of mud pots in Yellowstone. Pour into a loaf pan and refridgerate over night. I slice mine les than a 1/4 inch, but others like it thicker.

Its called FuFu where I come from and I have eat an 18 wheeler load of it in my lifetime.

I sometimes make the mush and fry it too. Wife does not eat it. I have had it off and on all my long life. Love,Love Buckwheat pancakes too. Pancake Pantry in Gatlinburg has the best!! YUMMMY I just got three boxes of the mix from Hodgen mill, Cannot find it locally.

SweetFeet

Think I will make some mush today, Hungry for it now. SweetFeet, I envy your computer skills, and your passion for Farmall Regular. I grew up on one, would love to have one now, but is not meant to be I guess. But always enjoy stories and pictures about them!!

Sweetfeet,
We always called cornbread "Johnny Cake" as well.
Years ago my Mom told me she thought the name may have originally been "Journey Cake" and was packed when someone was going on a trip.
Well I looked it up on Wikipedia and sure enuf it sometimes called "Journey Cake" but no mention of it being prepared for a journey.
A lot of interesting info on Wikipedia about it tho.
We used to break it up in a bowl add milk and either sugar or salt. Makes me hungry just thinkin' about it. LOL

Wow, haven't heard that term in years. When I was a kid when my Mom made either cornmeal or Cream of Wheat (Farina), she would always make a very large batch and we would eat it as a hot cereal the first day and fried the next.
She would roll the cut pieces in the dry cornmeal (or Cream of Wheat) from the box and fry in butter or bacon grease until it was nicely browned.
We always topped it with some of Dad's homemade maple syrup. Real good stuff!!

I like fried mush also; however, my wife doesn"t like it. I like dark the roasted kind, it has more of a flavor than the yellow. It is made by Haldeman Mills in Manheim, Pa.

Love mush. Make it exactly like Fergienewbee says. Slice and fry it in bacon grease and cover it in real maple syrup.

I am waiting for all the comments like the last time I mentioned bacon grease. Ha ha. Come to think of it my grease supply is low. I'll cook up two pounds tomorrow just in case.

Brian G NY,

Hey thanks. Never thought of looking on Wiki... interesting. Will have to go and read all the info.

We just ate it warm instead of bread. With a little butter and a little honey. Have never tried it in a bowl with milk.

My mom made it with grits. Cooked early in day, poured into bread pan about half full let cool then fridge. Fried in lard and we ate it faster than could fry it.
