1994 Salsa???

I have a two cases of half pints of salsa that I have been eating on. They taste great and are still 'chunky' with tomatoes.

I pressure canned them in September of 1994. The seals are tight and they smell great and taste fine.

What are your thoughts on eating something you pressure canned 17 years ago?
 
thats because you didn't put a "best before" date on them, and now the presevatives are preserved. ooh dont let the kids know how old.
 
There's a riverboat museum in KC - some old paddlewheel that sunk in MO river then flooding changed the channel and the boat was buried in a Kansas field. They dug it up, everything was well preserved under all that dirt and no oxygen. It was loaded with supplies for the folks moving west - lots of canned (glass) goods. The salvagers say they have eaten some of it. Steamboat Arabia Museum - google it.
 
Your "Best Before" statement got me to thinkin'

For years, I would call different companies Customer Service and inquire about the 'Best Before' date. Most said that that was all they were allowed to say it was good for. A few went even further and said that as long as the seal wasn't broken or hooved up and you heard the vacuum break when you opened it, if it didn't smell bad or rancid, it was okay to eat!
 
I just looked it up...thanks for the info. Very interesting about the ship wreak being found 45 feet below ground.
 
ya, they just have to have a date on it now to cover their behind i suppose but its still good as you say. i notice in the store that when stuff is on sale the best before date is almost due. i dont think they can sell it once the time is up.
 
There is plenty of over date food sold and given out at food banks.My daughter had a bottle of salad dressing that was a month over date.She was going to throw it out.I used it.Ive always kept a stash of canned goods,just mark the month and year on the can and rotate the stock.I grew up in the 40s and 50s.Nothing was ever wasted.
 
Found some Hunt's tomato sauce in the pantry that was 3 years past its best by date. 8 cans of it.

Opened one and it tasted just as nasty as it did when I first bought it. Threw it in with the fresh tomato sauce I was cooking to dilute the oregano. Made 10 quarts of the best sauce I've ever done.
 
Canned stuff either will go bad soon after canning (air not completely purged from the jar), or not at all. After that, its just a matter of decline in quality, usually from exposure to light. If its still sealed, it will be safe, but age may have made it less appealing.
 
I open them, and smell. If it smells good. Eat it. If not, pitch it. I have had more problems with store bough food going bad then what I have canned.

Used the last of a batch of "salsa: my wife canned back in "74 a few months ago. Was just fine. However I hasten to add that this stuff was full of HOT peppers, and probably was spoil-proof. Was still good. Wish she could find that recipe again!
