zuchinni bread

Ultradog says he will not eat squash,I was wondering how many people on here like zuchinni bread? My wife makes it and you would not know it was squash
 
I eat it. I love it. My wife has a recipe called zupple crisp. It is like apple crisp but with zuchinni in it. It has pineapple in it and she also has a recipe to make imitation pineapple using YOU GUESSED IT zuchinni.

That's good stuff, but then I like squash. A friend at church makes a pie with squash that taste just like pumpkin and I think she said she uses butternut squash in it.
 
It is awesome! I nearly thought to reply "make bread" when I saw the pics of all your yellow summer squash.

I used to know a lady at work that made it... very moist, good quick bread.
 
That's some good stuff..... Zuccini is one of the few veggies you can get in a store in the wintertime that isn't (doesn't taste like it anyway) from a greenhouse....... Pretty good dipped in olive oil, seasoned however you want, and put on the bbq grill too.....
 
I'll eat ultra's share, I love zuchinni bread. Wife makes some Italian concoction with diced up chicken, sliced zuchinni and red sauce that's pretty tasty too.
 
Please send Ultradog's share my way.... I like it better than the pumpkin bread.
Can't grow zucchini anymore as wife found out she's become allergic to it and some other squash. So, no zucchini bread anymore. No pan fried zucchini. No sauteed zucchini. You get the picture.

Going to have to see if mom has some....

Think the wife makes something close to that but with a white sauce. Youhardly see the big ones that used to fill up the trunk of the car here, most are about the size of a cucumber and 8 to 12 inches long... Taste just as good, but the big ones would be more fun to fry and do on the grill. She feeds me all the zuchinni I can eat cause she cuts me back on my beloved tators.....
 
I love all squash cooked about any way it can be fixed but my favorites are fried Patty Pan slices and Zuchinni Bread,my wife puts Coconut in hers its great with a glass of milk.
 
some folks don't like the zuchinni after they get large - here is recipe to use the large ones:
ZUCCHINI MARMALADE


6c peeled and grated zucchini
1c water
6c sugar
2TBLs lemon juice
1 20oz can crushed pineapple (drain & save juice)
1/4tsp pineapple flavoring
2 3oz package (dry) apricot Jell-O


Cook Zucchini in water over medium heat for 6 min. Add sugar,
lemon juice, pineapple juice & flavoring bringing to a boil.
Cook for 6 min. add two pkg. of Jell-O stirring until completely
dissolved. Pour in jars of choice and seal. Bon' Appetite
 
We don't garden at my house but just for fun I told the kids to each pick out a bag of seed for whatever they would like to grow. My 9 year old got the zuchinni. I've had bread etc,etc and am running out of stuff to make. I had no idea how fast that stuff grows! :lol:

I'll eat the plain squash too. Fried or on a kabob are both good.
I've got a feeling I'm going to have more crook neck (yellow squash/summer squash) than I know what to do with this year.
I'm open to recipes on those too!
 
Slice it in a casserole dish. Add a bit of olive oil and some onion and a bit of thyme. Micro-wave for 8 minutes stirring once. Drain it and salt and pepper and cover with shredded cheese. Micro-wave 2 minutes more to melt cheese and let it cool a bit and enjoy. My mouth is watering just typing this.
 
Planted a row for the first time this year. Gave a whole bunch to the food shelf. They had a different gal working it the next week so gave them some more. Don't know if people took them or they threw them away. I don't like any squash. I do know the cucumbers , carrots , potatoes and sweet corn go over real well there. Problem is, this year, about the only thing I have to give away is zuchinni and cucumbers.
 
I love zuchinni and I love bread, and at first they don't sound so good together, like "sweet and sour", but I have tried zuchinni bread, and its good. Given a chance, I will eat it again. Sweet and sour though? Never tried it, not interested. I like sweet and I like sour, but in my mouth together at the dinner table where things are supposed to be enjoyable, a war in my mouth is not something that...

Yup is good stuff! We have only been getting zuchinni for about 2 weeks now. Been enjoying on the grill so far. Sliced thin long ways. Put a little olive oil on them. Sprinkle with lawrys garlic salt. Toss on a hot grill. Then when done sometimes put just a little butter on them. Yummy! When we can't keep up with eating them, then my wife will start making zuchinni bread out of them. SHON
 
Love the stuff, and all squash. The wife had zucchini, yellow, butternut. acorn, patty pan and spaghetti squash this year. A friend of hers sent her a cookbook that is nothing but squash recipes. She even made a butternut cheesecake that was some kind of good.

I do like zuchinni bread. My favorite aunt used to make it for me. She lived south of the Twin Cities and was pretty ill with cancer. So I'd go down there pretty often and do odd jobs for her.
She's always make zuchinni, pumpkin, carrot, or banana bread for me. Towards the end when I don't know she could make the effort to do the baking she'd still have some kind of treats for me.
So you guys who are trying to glom onto my share of the zuchinni bread forget it. I'm right here in line with my hand out. :)
