First canning project

Did 12 pints and 5 quarts of spiced beets last night. First ever time try at canning. Of course had to experiment a little. 3 of the pints have a chili pepper in them to add a little heat. Hope they turn out good. Just waiting for the beans, carrots, jalapenos, habanaro peppers, and tomatoes. There will be a lot more to go. Also had my first sweetcorn last night. Full ears, but small kernels. Figured that was still good because of how dry it has been.

They look great--my wife tried a new recipe for pickled beets with a little horseradfish in them, think they'll turn out great for pickling some hardboiled eggs. Just peel the eggs, add some water to the beet juice and refridgerste for about three days--good. Little tip if it's your first time canning. After your jars have sealed and cooled, remove the rings so they don't rust between them and the jars.
 
Looks fantastic. You did a great job. Now just be sure that when you open them, you can tell that they "pop" when you pry the lid off so you know they were sealed.
 
This morning, pressed on the lids, and none of them "clicked", so I am sure all sealed good. I like it when the start to cool down and you hear the lid pop when it sucks down to seal.
 
Looks great, pickled beets are may favorite canned good. I plant beets first and last in the garden, plus a couple more times in the middle. I have three different stages of beets growing now and I'm going to plant some more soon. I make pickled beets once a month or whenever my supply runs out, I wait three days for them to pickle and start eating them. I'm lucky in that I only have to share with the youngest kid, the wife and the two big ones think they taste like dirt.
 
I canned B & B pickles last night. I tried sterilizing the jars in the over. Tem minutes at 225--longer is okay but not shorter than ten. Seemed to work great. My wife also removes the rings once they seal.
