A guy that had horses on my place planted wheat this past fall. He has moved them off and I had chicken litter spread, now the wheat is growing like a weed. Can this be cut into hay? If so, any thing I need to look out far?

Just cut it before the flag leaf stage or it will be alot harder to dry. The energy and protein levels should be around the same as thimothy or brome at that stage....Ron

Good hay in the early boot stage, don't wait till its making grain or it will turn to straw quick.

I have read that ruminants can't eat the mature grain as it turns into dough in their intestines and they can't digest it.

Agree with the others and see no reason why not. Now, will the cows eat it or not? Seems the nicer you are to animals the worse they treat you. If mine get a taste of sudan sorghum, they just turn their noses up at everything else and by gum they will just let it sit and go hungry first.

Makes good hay- main problem with winter wheat is that it gets ready (boot) too early, usually before the weather's right.

That's not exactly correct. Ruminants can eat Wheat grain as long as it's in moderation as in 25% of their diet. Also if the Wheat hay is cut at the proper time the seed heads will not turn doughy.
