Did some Smoking.Looking for a summer Sausage recipe(PIC)

Hey guys I used my new smoker for the first time yesterday.Put the deer to a good use and made some yummy summer sausage.Now I'm hooked and looking for some recipes to try.This was a sausage making kit bought from the store so spices were pre mixed.So anyone out there want to share a recipe?Sorry no tractor this time .Thanks Guys BlaineF(WA)

2 lbs. lean ground beef
4 T. curing salt
1/2 tsp.ground coriander seed
1/2 tsp. onion salt
1/4 tsp. garlic salt or powder
several drops of liquid smoke
1 C. water
Dash of Nutmeg and pepper
Mix all ingrediants together, form into rols 2" in diameter. Makes 4 rolls. Seal each roll in aluminum foil. refrigerate for 24 hours. Boil1 hour in foil. Open foil,drain. When cool,wrap in plastic and refrigerate, May be frozen after cooking or just eat.
