OT DEER JURKY

I ma so sorry but I just had to do it, OK GUYS
This is a big plate DEER JURKY that I started this morning at 7:am and I am about 1/4 of the way done. on the plate is about 2 1/2 lbs.I am hoping for about 10 lbs after I am done.

The wife will keep a roast from last years deer, partially thaw it and slice it a little thinner than that for our jerky. She does it right before deer season starts. She thinks this will give me some motivation to hunt after I get a taste. Little does she know I'd be out there without. We had tender loin last night for dinner and made some sandwiches for lunch today out of the leftovers.
 
JR, I admire guys like you; looks like real good stuff and I know there will be a lot of enjoyment derived from all your hard work!

I"m not much of a hunter and neither is my son; however....at least he has a reputation for makin" real good venison jerky. A couple of his buddies donate and everyone"s a winner; even me and I don"t do a thing! LOL
He also smokes a lot of meat and fish.
He has a "kegerator" in his basement and it is a great place for him and his buddies to hang out.
 
I've been on a kick lately of playing around with deer jerky. Only thing is, I'll make a batch, decide it's not too bad, and then I can't remember what I put in it.

My old standby recipe is one pound of ground deer meat, and add one teaspoon each of table salt, black pepper, garlic salt, onion salt, and liquid smoke. I shoot it with a jerky shooter and put it in my dehydrator for 7 hours.

The stuff's habit forming. My wife won't eat it, so I get it all myself. Her father was the ultimate picky eater, and a lot of it rubbed off onto her.
 
I get mine done into steaks, roast, tenderloin, and what is left gets ground with beef fat added. About the first week of January, I get the urge to start making jerky. I use the shooter and dehydrator. It runs all night. Then before my wife gets home from work the next afternoon, most of it is gone and time to start another batch. It is addictive. (She also likes it, when any is left for her)
