Catfish is great. I have a guy that brings me all the catfish he catches, he believes they are a "trash" fish.

Filet them, or just gut and de-head, salt,pepper, onions, wrap in tin foil and grill. Awesome.

Try it, you'll like it.

Bull heads, Yellow Belly cats, and channel cats are
great eating. Mellow and not fishey. Do not eat
monster fish of any kind, they have lived long
enough to collect serious mercury and other

The biggest one I have ever saw was in the trunk of a 57 Chevy with it s nose against one fender, and its tail curled up touching the other fender.

Here in Georgia we go to the Altamaha river and catch apaloosa cats. They taste the same 5 to 75 lbs. Channel and Bues here have a strong taste when they get over 5 lbs unless you soak them in salt or vinegar over night

redneck food i guess unless you catch the little bullheads about 4"" to 7"" long. Easy to clean and no contaminates up in the clean lakes we have.
