How do you attach signs to "T" posts? There must be a way, let's hear it from the fertile minds!

I use galvanised iron pipe saddles round the post and self tapping screws into the back of the sign. Once screwed into position use slip joint pliers to squeeze the saddle hard against the post to lock it at the height you want . Also works for poly pipe up stands .
Interestingly T posts are called Star pickets here in Australia.

If you're wanting "no trespassing" signs for t posts there are 3D signs available that slip over the top of the post.
