Where would the lever be for the
over/under shift? If there's no decals for
the over/under on the hood, how can I spot
if it's a 6 or 18 speed transmission?

Like here? The only Oliver I've run was a 70. I'm am international guy but have always had a soft spot for the 55s.

Yes, the lower lever is the over/under selector. You should feel 3 positions when you move it. Left side under the fuel tank, inside the frame should be a fill cap with a dipstick on it. be sure to check the oil level in it.
 
The over/under is separate from the transmission. It sits between the clutch and transmission. If it is a 6 speed there is just a shaft between the clutch and transmission. The 18 speed is a 6 speed transmission with the 3 speed hydral shift in front of it. The 3 speed shifter and throttle are side by side on the right hand side of the dash.
 
Since you are new to this transmission, please be aware that it will free wheel in the underdrive position.
