Ford recommends UTF. Lots of folks use the Traveler brand UTF from TSC. Works much better below 32* than the OEM 80/90 w.

Its all branding. Valvoline, Shell, Amsoil
Temperatures are the key, 80W for cold temperatures and 90W for higher temperatures.
Remember transmission and hydraulics are using the same oil reservoir.
My manual has 5 gallons of 90W, i am in Washington state on the coast and 20 is damn Artic circle temperatures here.

Depends on how you will use it. Modern UTF will absorb moisture from condensation in the air and soon look like a milkshake so that you will need to change it. If you use it hard enough frequently enough the heat will drive the moisture out. If not the old school 80-90 will work well and you can remove the water by simply loosening the drain once or twice a yer.
