2N Engine Issues

I recently acquired a Ford 2N that apparently has lived a hard life. A couple questions: Removal of the engine head revealed that 2 head gaskets were installed, which leads me to believe that the head was planed excessively at some point in the past, so an extra gasket was added to provide piston clearance. (The head is not warped, but pistons do contact the head if only one head gasket is in place.) Would it be prudent for me to replace the head now, or could I expect a few years of service by utilizing the existing head with 2 head gaskets again?

The other option is to grind away material in each combustion chamber until the pistons clear with one gasket. But of course the easy road to take is the two gaskets as long as they seal.
 
I removed material after having a head resurfaced, worked good. The other thing you could do is just replace the head!
 
Seems to me like surfacing the head to clear the pistons with NO gasket in place is the right thing to do. Then either a metal or composite gasket will still have adequate clearance. Just sayin'
 
at the low compression of a 9n I believe around 6to1 use the two gaskets but I would spray them with copper coat, torque it up and go about your day
