I just finished peeling and cutting up the last 4 Butternut squash and they are in the pot cooking. The last Blue Hubbard will go in the oven at 325 until tender after scooping out the guts of course. Once tender we scoop out the flesh and mash with butter and honey or maple syrup sometimes even brown sugar then freeze in quart freezer bags. I had to toss out 2 Blue Hubbards that were rotten on the inside the first one I cut open on the kitchen counter and what a mess water and guts came splashing out flooding the counter and onto the floor and it didn't smell great. I now shake them and listen for the liquid sloshing around, the critters can have have the second one out on the compost pile I gave it a toss onto the pile and everything came splashing out. My wife will be peeling apples and making and freezing applesauce this afternoon and that should be the end of it for this season.
