All remote valves were options. There are many styles, some made by Ford and others made by third party companies. The ones sold for the row crop tractors usually had the handles going off to the right side as you sit on the tractor. If yours have the handles going toward the front, then a previous owner probably added the valve without knowing which ones were proper, or maybe he just didn't care, or couldn't find the proper one.
 
Have a nice one arm loader that used a double valve. Second valve for hydraulic bucket. Would look good on your 740 for the show. Valves were options as Sean said.

Most (all?) Ford manufactured valves have FoMoCo cast into the valve body.
 
Part number for the original blocking plate is NCA475E. Google that part number and you'll find plenty of them out there for sale.
 
Probably find none on EBay. I dont think I have one anymore. Those remote valves usually bring good money if you elect to sell it.
