thermostat for Ford 600

I have my Ford 600 engine apart. The thermostat says 180F but I've read elsewhere that is should be a 160F t-stat.

Any suggestions or what I should purchase? Do I get that off of the ytmag parts list?

guess its user preference.. down in the hot country, I prefer the 160.. so yes, the gauge creeps up when working very hard, but it also creeps back down when you slack off a bit.. I like to see the feed back from a good cooling system and also can tell faster when the radiator needs the fins cleaned.... where a 180 pretty much stays put.
