860 Restoration before starting

Hello everyone, I'm newly registered but have read these forums off and on for a while. Let me preface this with I am NOT a mechanic but I do have mechanical abilities. I am in the final phase of restoration on my Grandfather's 1955 860. I have resleeved and rebuilt the engine, replaced the cracked head, rebuilt the oil/hydraulic pump, replaced the buttons on the clutch (properly) and got it set correctly, set the initial timing and points and replaced the top hydraulic piston and cylinder. I am at the point now to begin the final touches so that I can start the engine. I have drained/replaced all fluids and cleaned out the reservoirs. During reassembly I discovered and I'm now 100% certain that it was converted to 12V - ground many years ago but had been running it as a 6V + ground we didn't know this until now. All gauges are replaced and connected. The gentleman that had become my expert advisor and Ford mentor passed away last year before I could complete the restoration. My question is what final touches and checks should I do over the next few days before I turn the key. I know to polarize the generator, prime the oil/hydraulic pump, set carburetor check and set timing and points/condenser. What else should I do? I want to make sure it runs before I have the sheet metal painted and reattached. Also what engine oil should I use (to confirm I am using the correct weight). All advice and input is appreciated.
 

You can prime the oil by either cranking with plugs removed or by spinning the pump with a shaped shaft down where the distributor goes.
