Ford 601 still having issues after carb rebuild...

I have a 1958 601 Workmaster that I bought last summer, it has the TSX 580 carb on it. To stay running I had to always be feathering the choke. I recently did a full rebuild of the carb and it sounds great
idling and even at about half throttle but when you put a load on it, and I mean just going up a little incline or just in second gear with some throttle, it wants to die. I acts like it's starved for fuel.
It's better than it was before the carb kit but still can't put it in a higher gear and give it the gas to speed up. It will run along slow and steady in 1st year with just a little throttle but that's about
it. Any pointers you can offer? What I might be missing? I have a '48 Willys jeep so these old 4cyl engines are new to me but not sure what may be going on. I certainly couldn't put a plow behind it like
this.

have you backed the main power mixture adjustment out to provide more fuel/richer?

In addition to the excellent advice JMOR gave you, needing choke to run is an indication of lean fuel mixture.

Initial setting should be 1½ turns out on idle mixture screw, and 1½-2 turns out for the main fuel needle. Start at idle speed (450-500 RPM) and let the engine warm to operating temp then, adjust the idle mixture for the highest smooth idle 1/8th turn at a time. Ensure idle speed remains below 500 RPM while setting the idle mixture. After you make the idle mixture adjustment, then you can set the main jet for fuel requirements when running under load at WOT.

Keep in mind, the idle jet needle is an air control needle so turning it in enriches the idle mixture whereas the power jet needle controls fuel delivery and turning it in leans the mixture. The stumbling at elevated RPM indicates inadequate fuel delivery so you want to turn main jet CCW. If that doesn't fix the problem, you may have missed a bit of trash in an internal passage during the rebuild.

:) I was an instructor in the Navy and that was my method too.
