I am currently working on the engine for my Jubilee
that I am fixing up, and I was wondering if i should
go ahead and have the head, and block deck resurfaced,
to ensure proper head gasket sealing. Neither surface is
damaged, or warped, that i can tell, but since i am putting everything else new in it, it seems logical. If i do have it done, how much can come off, before you run into valve/piston clearance problems.

Thanks

If you are that curious, just check it with a reliable straight edge and feeler gauge. Don't fix something that ain't broke. When I did the same to my NAA, the head and block surface looked fine as well, so I just celaned them up, added a new gasket and everythings great.
