New Years Day afternoon meal,

PETA Certified Pork Chops with Black Eyed Peas and Corn Bread and a Glass (or two) of Cabernet.

I found that occasionally taking over the cooking duties is relaxing and quiets any jangled nerves. (My wife tells people I like to make pizza dough because it removes the tractor grease from my hands.)

Hopefully the world insanity of lying officials, corrupt organizations and terroristic murders will stop.

My Dad used to make bread and that is what he used to say too!

Had freshside pork and couple of eggs on toast for breakfast. Dinner: Hamburger steak & a mess of cabbage, onion and bacon all fried together with some salt and pepper. Supper: Clam chowder, whiskey dogs and fresh raw veggies. Good grub!!

One note about bread.

I lived through (thanks to the 5ft walls on Wolf Hall, Keesler AFB) the highest windspeed CAT 5 Hurricane to hit American soil, Camille, sustained winds of 225 mph.

Anyway, the aftermath left us all with nothing for weeks. I learned this recipe from the locals who obviously had only flour and Jax or Dixie beer). It's called 'beer bread". We all lived on this for some time.

3 cups flour
3 tsp. sugar (not needed if you don't have it)
1 can beer (12oz.)
Mix and put in bread loaf pan, bake for 30 minutes at 300 degrees.
Just remember the recipe is all 3's.

Ahhh, let me get this straight, "Just remember the recipe is all 3's." My guess is the other two cans of beer, as your recipe calls for one can, wasn't saved for the next batch of bread! I'm gonna give that a try when my bread stock depletes. Fresh, warm bread and liquid bread are a good combination. Lots a folks eatin' corn bread this week, that will be my 'left overs' supper tonight. Looks to be about lunch time, I'm thinkin' warm apple cider and a couple pieces of lefse.
