Rods post below reminded me of a conversation I had with my buddy. He is a dairyman and said "isn't it ironic that I qualify for government cheese". sad but true!
 
From what I remember, some of my relatives had lots of kids, tenant farmers, very poor. When dairy products were in excess, the USDA gave out what they called Commodities a day a month or some such. Cheese was one of the more sought after items. I believe they had powdered milk also. Somehow even landowners wound up with a great deal of it, as well as canned items such as beans, chicken and dumplings, whatnot. The canned foods came in gallon or maybe larger cans.
 
As I recall the cheese was a large chunk of American cheese. I addition to powdered milk, I believe there were also powdered eggs.
