Most maple syrup is pretty-much organic, but of course "modern" "organic" labeling is mostly about paying some weasel for "certification" and may have some effect on things you can and can't do, or use, in production - e.g., defoamers must be "organic" defoamers. Those may vary by state, country &/or certifier. Some of the whackier ones I've heard are not being able to use tree paint, and tapping size restrictions that are "well meaning" but also mean you can't tap a small tree you plan to cull "because it's too small to tap safely" when you have no interest in the long-term survival of that tree (and it's just fine to cull it - but not to tap it before culling it. :roll: )
