Depending on your budget, there are a lot of things you can do.
Higher compression with new pistons. Port the head. Cam change. Port the intake. Get a header for the exhaust with a free flowing muffler.
If you have deeeeep pockets, you can put an intercooled turbocharger on it and drill the intake for port fuel injection. That would be the solution yielding the spunkiest engine and be the most drivable with the highest fuel economy to boot.
If you just want to surprise the guy next to you, a 100hp NOS kit would do nicely.
Just remember that modern cars will roast you with little effort no matter what you do. New V6 mustangs are both quicker AND faster in the 1/4 than 1968 428CJ mustangs were back in the day.
