If the high and low measurement are very close to allow you the oil clearence (.001-.003) you need with the .0025 there will be no problem. Nobody ever intended to pull a crank and grind it .0025. MM furnish these bearings for a good crank that had slight normal wear. If you want to double check for your own satisfaction. Plastigage it like you mentioned. Do it twice. once with the crank in the vertical position and again at 90 degrees from there on the down stroke side.
