My experience with thermostats is that they tend to run hotter without the thermostat than with it(unless of course it was bad). Without the thermostat the water doesn't stay in the radiator long enough to cool down. As far as the timing just pull the distributor cap and watch which way the rotor turns. Turning it the opposite way will advance the timing.
