It is not true that all/most old Fords must be run with the choke partially on in order to run properly once warmed up.
I see no reason for you to change to a Zenith carb, at least not yet. There are many things that can cause your engine to run poorly unless it is choked.
I would look for the obvious problems first, e.g., vacuum leak between the carburetor and intake manifold or between the intake manifold and cylinder head, clogged fuel filter, bad fuel pump, poor/weak ignition, bad spark plugs, etc.
If you eliminate these problems and it still will not run correctly you can rebuild the carb at that time. If you do so, do yourself a favor and buy your kit at CNH. Take your tractor and carburetor serial number with you when you order it and be prepared to spend around $80. Get a copy of the carburetor overhaul pages from the proper CNH service manual and follow the procedure precisely. The Holley carburetors are sensitive to float adjustments due to the vacuum operated accelerator pump.
