I wouldn't use anything harder than grade 2. (no marks on head) I have never broken one, but I mostly mow pastures with mine.
I bought a 600 with a bush hog. Some idiot had used a grade 8 bolt for a shear bolt and a PTO shaft extension on the tractor. At some point they hit something and broke out the PTO shaft extender socket instead of the bolt. They capped all of this stupidity by welding the socket back together because they were too cheap to cough up the $7 bucks for a new one. Of course, now the extender was oversized and wobbled on the shaft. When I got the tractor the shaft was so worn I had to replace it.
If you have a problem breaking grade 2 bolts I would suggest you get a slip clutch.
