Whats for lunch/Supper!!!

Well a big pot of chili. I am the cook today. Here is how I make it.

4 Lbs hamburger
1 Lb sausage
1 gallon tomato juice
2 quarts diced tomatoes(ran through the blender)
8 cans of kidney beans(juice and all)
4 cups of shell macaroni(sometimes use rice)
1 tablespoon chili powder
2 cups choped onions
1/2 teaspoon salt
1 teaspoon black pepper

I then add more chili powder to taste.

Then a big handful of cheddar cheese in each bowl when served.

Yes I know it not healthy but where is the fun in eating things that taste like sawdust??? LOL

Even with this big pot we usually just have a meal or two left. Sundays the kids/grandkids swing in and out.
 
Sounds better that the stuff the kids make these days. they all seem to out do each other with how many hot peppers they can put in. I try to tell them that HOT is not a flavor,it just covers up flavor,but they seem more interested in making one another sweat.

The wife's got a beef roast in the over,with onions and carrots. She made a big batch of home made potato salad last night,so I'm eating good today when the roast is done!
 
Thru some beef shank with water in the oven before church.

Came home deboned it, added corn, peas, carrots, chopped onion, barley, celery to the beef broth. It made some of the best Vegetable Soup I have had in a long time.

Chili for supper.

Don't even mention Hamburger over here....Our big supermarkets have got caught out selling horsemeat in burgers....Big, big scandal, even the hospitals have been feeding it to the patients. Nothing wrong with horse meat ...but this stuff has come in from Eastern Europe and dear knows where else, and is not tracable at all, so could contain Bute and other nasty drugs that no amount of hot peppers could cure! The Jews/nnalert are not so happy either as some of these burgers also contained pig meat!!!!!
I think I will stick to good old fashioned steak or do without!

I don't know about not draining the beans! I always drain and rinse them! Lol, I put chicken chilli on the wood stove for the day. Chicken breast cut up, green bell pepper, diced tomatoes, chilli powder, onion, minced garlic, salt pepper ect.. The wind is really howling up here, it's 8 degrees with the wind chil!
 
Sam the burger I use was walking around here on the farm a few months ago. The sausage I buy a few hogs each year and have them processed as well.

I give the kids all the meat they use as well. My Dad and his second wife get some too. I often trade burger to friends for fish and chicken. I have two that raise each.

I have a small local locker process all my meat. The owner and I where in Nam together. So I am pretty sure I am getting my meat back.
 
Better not head up to Sweden,they make bologna out of it. First day my son was there moose hunting,they gave him a sandwich. After a few bites they told him he was eating retired race horse. He didn't give them the pleasure of even flinching. Said he ate it the whole time he was there. Said it was good.
 
If I was near I would like to sample a bowl.
The Iowa folks are just good at what they do best.

The healthy crap is for people that never leave their couch. Looks like a good recipe to me. Any of it home grown?
 
Mrs. Red has a very similar recipe. I call it Cherokee chili since she is part Cherokee. She will use hamburger one time, turkey another but sausage in both. I really cannot taste the difference between the two. She also has a chicken version but it has a totally different taste to it.
 
I think I will warm up half of the prime rib I made for Valentines Day..it was the best I have had in at least 10 years..bought it at a local butcher shop....

If I wasn't flying weekend cross countries, Vance AFB Officer's Club had a Friday night special on prime rib. Steak with all the fixings for $5. Pitcher of beer for $5. That was in the 1970s.
 
I try to keep up with eating the tomatoes during the summer, but toward the end, they get away from me, and I suddenly have a big bucket of them. Its time for chili. Chop them up, cook 'em down for about 2 hours. Meanwhile, saute hamburger, green peppers and onions, dump them in. I'll admit, I usually do a jalapeno or two, because Mrs (WA) and I both like it a little on the hot side (but not 5 alarm!). Bunch of beans, chili power, cumin, and oregano to taste.

Great eating- Has a fresh taste that you don't get with canned tomatoes. We freeze the extra, usually makes about 3 meals.

Tip when you're simmering any tomato based stuff- its real easy to scorch on the bottom of the pot. Cut 4 pieces of baling wire, put them crossways on the burner- it keeps the pot just high enough off the burner that it won't scorch. Talking about electric range, of course.
 
Back in my younger days we ate three meals a day.
Breakfast
Dinner
Supper
Now they call dinner lunch and supper, dinner
We would refer to lunch a meal that was light, like a sandwich.
After all in the good book, they called it the last supper. Not the last dinner.
 
Maybe, when people went to the local Diner to eat their evening meal that was how it might have become to be called "dinner"?

We went out for lunch after church at country restaurant down south of town. They have a good salad bar and fried chicken buffet. Salad with some pickled okra and beets then a couple pieces of chicken, some mashed taters and gravy, cooked carrots and a roll, all homemade. Then a piece of warm cherry pie with icecream for desert. It was delicious. On the way home we stopped by the store and picked up a few things, having homemade mac n cheese, asparagus and some thick kc strips for supper. The girl scouts were selling cookies outside the door of the grocery store so I had to bring home a couple boxes.
 
Tonight's menu includes oven roasted pork with gravy, mashed potatoes, peas, stuffing, and pudding.

I was raised in S. TX. like you. When I grew up and went into industry, they had the names all messed up as you stated.

Now that I am retired and back home, it's back to Breakfast, Dinner, and Supper. Flu Flu on the business world.

We just finished a pot of cabbage soup yesterday that I made last Monday. We had it every day for lunch. Recipe from a woman at church. Good stuff, Maynard!!!

Jerry........see the link below...I cook it for 15 minutes at 450° and then turn down to 325°..I put a thermometer in it and it comes out of the oven at 120° and let it sit for 20 minutes..that way the juice doesn't run out of it!!

We've got you beat on the "unhealthy' meals JD. We bought a deep fryer two days ago. Needless to say' we're putting it away for while.

Prime Rid, my favorite. I cook it as you do and it turns out perfect everytime. We too, buy from a "local" butcher, 40 miles from home!
 
Don't know what the main dish will be but I do know what's for desert. Couple weeks ago the topic of bundt cake came up when I was down to Mothers. Have not had it since I moved away from home 40 years ago. 90 year old Mother said she has not made it for years and years and she said she would look for her bundt pan and send it home with me sometime as she cannot bake anymore anyway. After she turned her house upside for two weeks and not found it, she was very upset that she did not know what happened to it. Unbe-noenst to me she had been on the phone for hours with my sisters trying to track down that pan. This afternoon my youngest sister shows up at my door with Mothers bundt pan in hand. Seems Mother had given it to her 30 years ago when she got married. Sister does not use it anymore so she brought it out to me. I never really mentioned that I want it but like I said it just came up in conversation. Anyway I just took a lemon bundt cake out of the oven and glazed it. So that is what's for desert. Oh by the way I will have sister bring Mother out some eve this week so we can all have coffee and bundt cake from Mothers old pan. I did not mean for this response to get this long but I wanted to make sure the story was told. yum, yum, The Flying Belgian.
 
My gosh JD you must need a huge pot to make that chili. It does sound good. Butterfly chops here some sort of potato a veggie and topped off with Beef House rolls
 
My wife made meatloaf out of DoubleR Farm homegrown beef burger. Baked potato and squash from her garden. It just seems to taste better when you know where it came from.
 
The wifey makes chilley a couple of days each week. Store bought burger , or home grown venison when we have it. All the other ingrediants aside from seasonings are garden grown, preserved and setting in our pantry. It costs us more for paper products, detergents, personal items, etc, than food, each week. This is my supper tonight. Thursdays leftovers. HeHe.

We still have supper at our house, but the kids have moved to the city now and would be made fun of if their freinds heard them call it supper, so they all eat "dinner" at supper time. Really hate to see people give up their heritage for the sake of fitting in.
 
Loren, that's a terrible presentation, your supposed wipe the top of the bowl clean! Hehe, like the chefs do on tv? Lol
 
I remember your thread asking what to buy? Lots of voted for a propane burner and a cast iron pot. What did you buy? Is it 220 v?
