just got home from PA

Supposed to get real cold in the morning ,so I snuck away to PA to pick everything and clean up the gardens ,Wasnt any tomatoes,but a lot of peppers, brush hogged the sweet corn stalks,and the garden patch and disked it up, The rye cover crop I seeded in the tilled up pumpkin patch is coming up already, Tonight the neighbor who hunts our woods gave me a bunch of venison all vaccum packed and frozen,

What are you doing with all the bell peppers? Our freezer's full, I plowed under a lot of nice ones yesterday. Then went to the grocery store and saw bell peppers -- didn't look close but think they were 79 cents a pound. Looks like you could be supplying a farmers' market.
 
Our freezer has been full for a month now with fresh garden vegies fish from the farm pond and a few store bought items, that were on sale. The wifey has been dehydrating peppers carrots, parsnips, turnips, zucchini, and herbs such as dill, parsley,fennel and thyme. The prep is the same as for freezing, except the vegies go into the dehydrater, rather than freezer bags. When dry, she just puts them in jars and they go out in the canning pantry. When she need some for soups or stews she just pours out what she needs, puts the cover back on until the next time she need them. She rehydrated some carrots the other night and it was hard to believe they were crunchy little wafers.

We've had a dehydrator for a long time sitting on a shelf and never used it til this fall. The apples dried in not much more than 6 hours with the heat halfway on the dial. They make great snacks.

Well, like you we have had the dehydrater for a long time. Bought it to make venison jerky. The wifey has been drying herbs etc., for several years, but when the Freezer was getting full, she started experiminting. It appears that dehydrating is a very viable option for our eating lifestyle.
