Controlling annual rye grass

I have some acreage that I cleared a few years ago. I had planted a cover crop mix to help smother weeds and tree seedlings. The annual rye grass is still growing strongly in some areas. There is also a clover mix for bee forage. I want to be active keeping mowing these areas this summer to minimize the rye grass reseeding. My question is, how long does the seed head have to mature before it has viable seed? Do the seed heads have to dry on the stalk? Any advice is appreciated.
 

Plant must turn color other than green for seeds to mature. I wish you Good Luck with your mowing as the only real control for rye grass that I've found is spraying with glyphosate or some other selective herbicide
