Unharvested Wheat/Oats Worst Case Scenario

I have two small plots, one wheat one oats. If I do nothing and just brush hog and disc in the oats what is the worst case scenario? If they over-winter and sprout in the spring I can plow them under. If they grow in the fall, they will winter kill most likely. I really thought the deer and rabbits would hit them hard. I never planned on having much of a crop.

I might leave the wheat as a fallow plot. It makes good brood cover for next year.

The oats will come up and winter kill. The wheat, really not sure this early in the year. Can do as you think and then cut for hay. My two cents with change back.
