Sweet Potato Help

My sweet potato has three sprouts with more coming. Leaves are forming. What do I do now? Do I cut the sprouts off and root them in water?

If you wish to plant them in your garden then let them grow until it is warm enough to plant. Otherwise break them off and start them in potting soil. They take root quickly and are very hardy. If you are in the south it is way too early to plant sweet potatoes. They do best planted along in late June to avoid oversized and pithy potatoes.
