How do you freeze Sweet corn

Just woundering what the best way to do it is. Do you husk it or just leave it on. My corn looks like its going to come in all together this year due mainly to all the rain we have had and dont think i can eat that much at once.
 
I husk it and put it in a freezer bag and try to get as much of the air out as I can and that is it. You can also blanch it. I have a couple books that tell you all the ins and out of it so if you want you can send me an e-mail and I'll scan those pages if that would help
 
Best way is to blanch it, cut if off the cob and freeze just the kernels. Leaving it on the cob takes up a lot of freezer space and is hard to heat up as the cob takes awhile to get unfrozen. We do a lot every year. If remember right we blanch it for 5 minutes, dump it into cold water to stop the cooking process and then we cut it off with an electric knife. We freeze it in zip lock bags. Not all corn freezes well (a few of the new hybrids don't work to well)so you want to make sure its a variety that is known to freeze OK.
 
We froze tons of it when I was a kid. Mother would dunk it in boiling water for a couple minutes, just long enough to get it hot but not cook it. Then she would douse it in ice water and us kids would cut the corn off and bag it. We'd have the shelves in the freezer packed solid with the stuff. We took the husks back to the cows by the wheelbarrow load. We tried freezing it on the cob but it tastes "cobby" to me.
 
Nah Australia. Its summer time here so they say but temps have been more like early spring. By the sounds of it we may get sum hot days next week
 
I agree with the 5 minute blanching, dip in cold water, and cut kernels off the cob.

One thing I will add: Do not pick the corn till you are ready to begin the canning process. A good family friend of ours who was a vegetable farmer and was feeding an even bigger family than ours said, "put the water on to boil and then go out and pick your corn." Corn begins losing quality the second it is removed from the stalk.

Corn only takes 4 minutes in boiling water to cook. Blanch for 2-3 minutes, strip off of the cob with a cabbage cutter, or corn cutter, put into tupperware boxes and freeze immediately.
 
I cook it on the charcoal grill with the husk on. Then cut off the kernals and put them in plastic freezer contianers. We have also blanched them in water cut off the kernals and freez them like others have said.
 
Man every body wants to make it taste bad LOL. When I freeze corn I do it on the cob, nothing beats a good sweet corn on the cob with a meal all covered with butter
 
Reminds me of that episode of M*A*S*H when they grew the corn. Come the day to pick it and cook it up,they were all drooling over the corn on the cob that they were going to get for the first time in ages. The cook took it all off the cob and cooked it. They all threw a fit,so he said,alright,next time I'll cream it!
 
Losing quality isn't necessarily the case with all of the varieties and sugar types sold these days. That certainly did hold true in times past, but today it does depend upon the corn.

Once the corn is blanched you should chill it quickly to stop the cooking action. This is best done in ice laden water.

Drain well. Either freeze on the cob or cut off as others have said. I prefer to use a vacuum sealer to remove as much air from the bag as possible. I flatten the bag as much as possible to provide greater surface exposure when placed in the freezer. I always add single layers in the freezer whenever possible so as to freeze the corn as quickly as possible.
 
Sorry but you got the end part wrong he creamed the corn by the way and he said well next time I'll just leave in on the cob and you can cut it off your self's. Just saw that one a week or so ago.
 

What has been said,, will add make sure to get all the heat out of it,,, it should feel cold not warm when you bag it are cut it off the cob...

Sitting around in shorts! And a fan to keep cool!!! better than what were in for,, -15 sunday night! lol j
 
I cut it off before blanching it, then boil it in a big pot for a few minutes, put in bags anc cool in ice water in the sink. Easier than boiling all ears.
 

Will keep that in mind,,, at that time the pix was took we mostly put it up on the ear,,, now we mostly cut if off the cob,,, that pix was took the first of July about 1 1/2 years ago...

If I feel like it I can grow 2 crops,,, one the middle of April and one sometime near the end of June ,,, one times enuff for me....
 
Cook right off stalk, remove outer shuck, cut off end, place in microwave, cook on high 2 to 3 mins per ear (depends on heat) remove rest of shuck, silks will fall right off, add butter, salt, pepper to taste, so good you will suck the cob!!
 
I'd blanch it and put it on non stick cookie trays and let it freeze for about an hour or two and THEN put it in a freezer bag. That way it's not all frozen in one big lump so you can just pour out a serving or two if you don't need the whole bag. That's how I do berries too, except for the blanching of course.
 
Boil for 2 to 3 min. on the cob then cool in cold water, cut off with a steak knife and put into pint freezer bags. When you use it do not boil, just heat and drain water and squeeze dry so there is no water, it tastes like you just picked it. A couple of people can freeze enough corn in an afternoon to last all year.
 
Yep and the way they did it if the cook had been a step closer he would have had a father fist in his face LOL because he the father was shaking his fist at the cook at the time
 
Corn should cooked in a steamer never boiled in water.10 minutes in the steamer is enough.Cooked on the grill on the husk is good.Corn has to be fresh, sugar turns to starch fast.
 
Oh yea,that's right. Been quite a while since I've watched any reruns of that show. Kinda burned out on it years ago.
 
We always cut it off the cob to freeze. By the time corn comes in freezer space it tight and them cobs take up alot of room for something you are just go'n to feed to the hogs anyway. I have had it and I can eat it but I don't really care for frozen corn on the cob maybe I just ain't had it fixed right I don't know.
