Anyone grow sunflowers?

Planted some mammoth sunflowers for the fun of it this year(probably 10-12 feet tall or more now). At this point the heads, some more than a foot across, looks like the seeds are all white and big at this point. When can I harvest them and bring them inside to dry? I have had no problems with birds or rodents till a couple of days ago, but now some blue jays have found them. My other issue will be frost soon(northern MN). Would be nice at this point to try and salvage some seeds if I can. Any thoughts or opinions would be greatly appreciated... THANK YOU---SHON
 
cutting the heads off ours this weekend when the rain stops...sounds like we are at about the same stage as you are. Our mammoths got about 18 feet tall...
 
Your question brought back the memory of a farmers first planting of sunflowers, up around Salina Ks...planted a whole field back in the 70s...problem was the combines sickle bar couldn't get through the stalks...ended up hiring laborers to machete the heads off and toss them into the combine

imagine the equipment is better now..
