OT: Carb-friendly rhubarb recipes?

Hey fellas, my homestead came with a small rhubarb patch that's just about ready for harvest.

Unfortunately, my mom just got done having a second set of bypasses done, and she's probably off the carbs for good. That means no pie.

So, does anybody have any good recpies for a heart and carb friendly rhubarb-based dessert?
 
My dear sweet lomg suffering Mother makes some sort of Rhubarb-Strawberry desert. No pastry with it's shortning and flour. I suspect it's the shortening is the main concern.
The strawberries add some natural sweetening. There must be some jello mix or something in there too for thickening.
If there was an artifical sweetener that didn't taste odd or have an "off" after taste that could be added.
 
I am a long ways from being a cook but try using Splenda as a substitute for sugar. Its made from sugar and tastes decent.
 
My wife makes a Rhubarb pie with just a crumb crust. It doesn't have a bottom crust. She just made one for our daughter's birthday. I will post the recipe when she gets up. Hal
 
Here's the wife's rhubarb pie recipe. Her mother would cook rhubarb into a sauce then add sugar and jello. My wife said she has made it, but it never tasted like her's. Never had a recipe. Hal
