This may be off topic,,but it is Farm related.
I get the Lancaster farm newspaper here in NJ Sent to me by mail.
This morning I was reading livestock sale reports.At the New Holland hog auction,,they had three
large boar hogs sell.They ranged from 600 to 800 lbs.
They brought from 02 to 05 cents.
Possibly,some one loaded an 800 lb boar,,sent it to the sale,and got 16 dollars,,and paid some
commision?
 
Those big boars get real cheap sometimes, I had an Uncle who used to buy them like that, 600 pounds was about his minimum, he liked them bigger, he took them home and cut their nuts and then fed them a couple months before slaughter. He sugar cured those big old hams and shoulders and sold the meat, easily the best ham I ever ate.
 
It might be a good niche market but most people today are used to what they have eaten all of their lives, which is young age feed lot beef and pork. Absolutely nothing wrong with it but there is a big difference in taste between a 16-20 month old steer and a 4 year old steer, same with hogs. I grew up on meat that was ''aged on the hoof'' and I still like it. Right now I have a straight jersey steer over 3 years old who has always been on grass, weighs about 1200, I'm gonna feed him this fall for 100 days and put him in the freezer, got a 2 year old jersey cross coming up behind him for next year or after when we need meat again.
 
I was reading about some breed of cow that tasted better being grass fed. The outfit was looking for farms to raise the breed. The farm had to be certified organic.
 
My dad did the same. Castrating a 600-lb boar was quite the process. Dad would place a 3/8 inch rope loop around the critter's top jaw, then tie it up overhead to a rafter. The hog would instinctively pull back but would stand amazingly still while the "surgery" was performed. After two months of grain feeding, the meat was great. A bit coarse, but not a hint of "boar taint" (an actual scientific term).
 
I have heard people rave about grass-fed beef being the best. Haven't convinced me. Takes much longer to reach slaughter weight and the quality of the meat just isn't there over grain-fed. I, somehow, believe it's a fetish of environmentalist types.

You are correct. It's all because of the environmental N a z i claim that raising corn is destroying the planet,so if you are going to eat beef,be a good little soldier and only eat grass fed.
