The original subject was "Re: ot cow with broke leg".

Found bull 3 days ago with broke leg good shape still eating. 1200 lbs 14 mo old. Will take some time to catch. How long would be best to wait to try butchering him?

Dads Angus bull got his RR leg broke, healed up crooked, never stopped him, still "worked" as good as before the break.

Tough break. (bad pun) Had 2 new bulls years ago, first day out with cows, had to fight, one broke a back leg. Most expensive meat I ever ate. I had to convince myself that it was far better than any other beef I had ever eaten.

asap. Butchered lots of broke legs when in the butcher business. The sooner the better as you have less blood and fluid build up. If you wait 3 days you may as well wait 3 months and let it heal. Within 24 hours is best.
If you wait to long the blood becomes a slimy ugly brown. Kind of starts infecting after 2-3 days, have to throw out more meat that way and we always wondered if the meat would be healthy on the rest of the animal if it was fighting infection.

What"s the deal....normal cow temp is 101, ok to butcher up to 103? Been awhile since I had livestock.
