I just cut this out of the flyer,,It says USDA choice,,should I buy one and try it?

Have had the pleasure of sourcing beef from a neighbour for several years now. It cannot be beat for quality. Have ignored grocery store meat as much as I can.
 
As SweetFeet said, don't just throw it in the oven like an ordinary roast- find a recipe for prime rib, and try to duplicate what you get in a fine restaurant. There was a restaurant in a small town here that drew clientele from far and wide because of their to-die-for prime rib- then new owner took it over, and despite offer from prior owner to come in and help with the prime rib until they "had it down pat", changed to marginal quality Italian food, and was broke in 2 months. Turned out the new owner's girlfriend didn't like prime rib. The lesson here- don't always listen to your girlfriend in matters of business.
 
We do one every year at Christmas. coat the ends of the roast with butter, salt & pepper on the roast and cook to medium rare/medium. Set out for about an hour to bring up to room temp before cooking. Also, I make a bleu cheese sauce that is incredible.


¾ cup heavy whipping cream
1 medium garlic clove, thinly sliced
6 ounces crumbled blue cheese
Freshly ground black pepper

Place the cream and garlic in a medium saucepan. Bring the cream to a boil over medium-high heat, and then lower the heat to a simmer. Cook until the cream coats the back of a spoon, 5 to 10 minutes. Remove the pan from the heat. Add the cheese, stirring to help it blend into the cream. Season with pepper.

You can have the recipe for the roast if you get it. Tonight's supper was chip steak sandwich, she mage it from a piece of chuck roast. She will make beef stew with the rest.
