I had some brick work done on my house and have 4 bags of masonry cement. Could I use this to make concrete for setting pipe posts? I cannot return it as I bought it wholesale.

Absolutely. All concrete does around posts is increase the size of post which contacts the dirt. It's not Type 2 for ground contact but it will work very well. The strength of the concrete needs to only be stronger than the soil, not the post.
I always pack my concrete mix in dry around the post to get a little more soil compaction. Within a month the mix is hard, you can't keep it from hardening.
