I know it varies as to what all you have done such as hams smoked or beacon cured but what is a ball park figure to have a butcher shop process a hog?
 
Its been a while since I had one done. But I think it was around 50 cents a lb , hanging weight. And then some extra for the curing. I think probably came out to about $150 to $ 160 a pig. Maybe a little higher depending on wether sausage is loose or stuffed. Going from memory so could be wrong but I think thats about right. jstpa
 
50 cents on the hanging weight is right on. I just had one done 61# curing and 17# sausage cost 179.00 tax included.
 
Our current butcher runs around $100 per pig depending on size. There's a per pound charge for cutting and packing plus a kill charge, smoking charge and sausage charge but that's generally somewhere near what it totals.

Depends on what cuts you want I believe. When I used to raise hogs, I would have 1 butchered every year for my family. I had chops, steaks, roasts, bacon sliced and cured, hams cured, pork patties, ribs, made from mine. I always had George's in Nicollet do the processing for me. They do an excellent job there. I know that having the bacon and hams can get expensive because they charge by the pound for curing these. But still worth it. The last hog I raised and butchered was around 325 lbs. and I think it cost me around $250.00 for the whole hog to be processed. And I was very happy with it also. Good luck sir.

About $350 where I'm at. That's cured hams and vacum seal properly packaging. This is a whole hog 280 live weight.
 
I had three done last fall.

Dead weight of two of them was 220 third was 260. After cutting the access fat off, removing the head, skin and guts the weight for all three averaged 160 lbs.

Cost for cutting and wrap .65 cents per pound.

Cost for smoking was $1.10.

On average there is 22lbs of bacon per hog and the two hams will weigh 25 lbs each.

Smoking cost $72.71 per hog
Cutting cost $104.00 per hog

On site slaughter was $30.00 per animal

Total per pig: $206.71
 
I always had [b:b5f880ad1f]George's in Nicollet [/b:b5f880ad1f]do the processing for me. They do an excellent job there.

Is George's connected with Schmidt's? My wife is from New Ulm originally, and we always stop at Schmidt's when passing through, and I have taken to ordering Christmas gifts from them shipped to friends. Best smelling business I have ever been in, even better than the brewery...
 
No. George's and Schmidt's are 2 separate family operated butcher shops in the same small town.

I had some venison sausage made at Schimdt's last fall, and they even vacuum sealed it. I really like their German Beer Summer Sausage.
