One of our state legislators here in NY is pushing a bill to establish standards for the production of birch and walnut syrup to supplement our maple syrup industry. The article says walnut syrup is a bit sweeter than maple with a slightly nutty flavor and birch syrup is a slightly fruity flavor. Hmmmmmm. The two people I know who have tasted birch syrup tell me it is very dark colored and has a somewhat bitter taste. Seems to be a bit of disparity here.
Anybody ever tasted either? What was your assessment of them?
