One of our state legislators here in NY is pushing a bill to establish standards for the production of birch and walnut syrup to supplement our maple syrup industry. The article says walnut syrup is a bit sweeter than maple with a slightly nutty flavor and birch syrup is a slightly fruity flavor. Hmmmmmm. The two people I know who have tasted birch syrup tell me it is very dark colored and has a somewhat bitter taste. Seems to be a bit of disparity here.

Anybody ever tasted either? What was your assessment of them?
 
Met a guy a few years back from Alaska who made birch syrup. His was a bit less sweet than maple, but very much the same in flavor. Color was a touch darker than fancy maple but still fairly light. No sign of fruity flavor, but then again I wasn't really looking for it. I'd imagine it's much like maple syrup--lots of things (soil type, time of season, method of production etc. etc.) can affect the end product. Haven't had walnut syrup, though I've seen references to it, just not locally.
 
Back a year or so on one of those Discovery Alaska shows they showed a family makeing Birch syrup. They said it took about 100 gal of sap. to make a gal. of syrup. That is more than twice as much sap to make a gal. of maple syrup. Lots of work for little return. I know nothing about walnut syrup.
I think our state legislators and senators better focus on cleaning up their own governing bodies, before they worry about makeing syrup. The Feds are starting to weed out the big long time crooks, but the flock needs to bust down the political fence and represent their constiuents, rather than playing paddy cake with the senate and legislative leaders, both of whom are now charged with federal charges of racketeering and colusion by the Feds. and forced to step down.

Birch and walnut syrup? Probably has a better chance of making a profit than Cuomos $57M of taxpayer money START-NY program that has resulted in 7, yes SEVEN, jobs.
 
Donald, My wife has been using XYLITOL. It is made in Canada of birch trees and sold as Xylitol USA out of Aurora, CO. Naturally sugar free No artificial sweetener and Diabetic safe. She use's it just as if it were sugar. If you check the web you will find it. oldiron29
 
The guy just wants to be Gov. himself. Doubt if he give a hoot about the shady goings on.
