Beans and eggs....

Anyone else eat them together? Growing up in South Dakota, that was my mom's quick meal. Scramble some eggs and mix with some cold Van Camps pork and beans. Nowadays I use Bush's beans...but still good for a quick meal. Another was left over pork or beef in gravy over torn up pieces of bread. Also thick cream spread on bread. She would also take leftover mashed potatoes, add some eggs and fry up in patties. Any other "odd" meals you can think of?
 
I eat the Bush beans with onions and fried eggs over easly and several pieces of buttered bread.This is one of my quick meals.
 
I have not had eggs and beans. I really would not want to be around you the day after either. LOL

You might as well wash it all down with some cheap beer and then you would really be loaded for bear!!!!!
 
I eat that combo alot . I fry up two eggs over
easy and nuke a half a can of Ranch Style Beans .
They are just pintos in sauce , a little on the hot
side , sometimes I get 'em with jalapn~os ....Oh
and don't forget the toast & coffee !
 
I have never eaten that combination, but I would not turn up my nose at either. I find it interesting to read and hear of the various ways people prepare food. And I seldom prejudge any dish until I have tried it, because if you do, you will miss out on some good eatin'.
A few months ago, I was trying to figure what to eat for breakfast one morning. I had eggs but no sausage, bacon or ham. Hmmmm. I have no idea why I thought of this, but I opened a can of tuna, got it hot in a frying pan, then threw in a couple of eggs and scrambled the whole mess. Since then I have this dish about once a week.
After all, great dishes are created, they don't happen automatically.
 

We also had what mom called "breakfast meat"....sounded better than head cheese I guess. We called it "piggy meat". My dad would split the pigs head when we butchered, scramble the brains with eggs the first day, then mom would cook the head while we processed the rest of the hog. The meat was separated from the fat and bone, dad ground it up and back into the broth it went along with a couple containers of rolled oats and his special spices. All us kids got to help with the taste testing as it was cooked up, then mom would package it up in "bricks" and freeze it. For breakfast, she would slice off 1/2" slices and fry it, mashing it to the size of a slice of bread. Then we would make a sandwich with toasted or untoasted bread...sometimes just mixing with scrambled eggs and having it with toast.
 
Eldon, that sounds a lot like what we in the South call "souse meat", which is made from hogs head and sometimes the feet and other parts. I didn't read the entire article, but according to Wikipedia, the recipe came from Europe. ( I guess it came with the immigrants) In the South it is often flavored with onion and/or other spices. I guess it all goes back to the saying, which is very true in many cases, that when butchering hogs, people "used everything but the stink".
 
I put an extra Yukon Gold potato or two in to bake when SWMBO is baking something- then grate a half or third of one directly into the skillet when frying an egg. Love those hash browns. Baked spud will keep up to a week or so in the fridge.
 
My favorite breakfast ; cut bacon into small pieces, brown in skillet , Cut leftover potatoes into 1 inch (+or-)pieces , add to bacon scramble eggs and cook until done. We also add whatever else you want to, including ,onion, pepers, tomatoes, olives,ham, sausage, or anything! best toped with gravy or maybe cheese.
If you don't have a baked potatoe, just microwave one. joe
 
Hot Johnnycake slathered with maple syrup, milk and last nights boiled taters diced and browned and piled on top, with a couple of slices of salt pork on the side!


Been years since we've raised a pig with enough back fat to make salt pork, but it sure is fun to see the Doc's face go white and see her speechless.............................

Actually she's young enough, I doubt she really knows what salt pork is, but the mention of "salt" and "pork" in the same sentence darn near gives most any Doc a heart attack...........(smile) Ain't I a stinker?
 
Oh God, I miss head cheese!! We used to make it every year. Grand parents and my father loved the stuff. My mother couldn't stand it and I'm the only one of me generation who likes it. Hopefully I'll be able to make a batch this year when we butcher. The trick is to make sure the butcher saves the head and hocks, etc.

eating found complete eyelid in my mouth, hair and
all. check the rest of order. Found part of an
eye. Last time ever for me!!
 
On a regular basis. Here in TX refried beans are served with
breakfast, especially in the Mexican restaurants.
