OT Canning Asparagus

Since asparagus season is just around the corner I want to ask if any of you have ever hot packed or cold packed asparagus in jars? If so how did you do it and did you have luck doing it? I've been blanching it then freezing it the last few years and I'm not really satisfied with the results. I've did some google research and see that it is quite easy to can it but it's always nice to talk to some one that has done it. Thanks again, John B.
 
I like it pickled, it does not over power the asparagus taste and when pickled raw it does not get mushy.
 
Tried for the first time last year. Looked good when done, but when sitting in our storage area with the rest of the canning, the seals would pop loose. Nasty smelling stuff. Might try pickled this year and increase the head space another 1/4" or more to see if that helps. Might also try and dehydrate some also.
 
Did it one time just to have it as an entry at the farm fair. Got a blue but I still think it was a waste of totally good asparagus! Cold pack and pressure cook. I reduced the cook time by about one third and also used some citric acid. Looked fine but I LOVE fresh with a big lump of butter, and garlic, and some white wine in a hot pan till it turns bright green and still has some crunch. YYYYUUUUUUMMMMMM !!!!
 
I'll bet you a dime doughnut and a dollar bill I have at least 4 recipes as to how to can asparagus. I have not done any as of yet but that is due to the fact it takes a few years to get a asparagus bed going good enough to harvest any of it
 
Been blanching and freezing for years, with very good results. Only way to can might be pickling for Bloody Mary's.
 
we planted 1000 roots 3 years ago. Last year, we were able to start heavy harvest, and sold it to a local independant grocery store. They closed this fall, so now have all the asparagus and have to find another outlet.
