Looking to buy new vacuum sealer so does the higher the amp mean the more suction or stronger motor ?
 

You can only pull vacuum to whatever barometric pressure is, somewhere around 29 inHg depending on the weather and your elevation. Some of the current surely goes to a bigger vacuum pump to pull the air out faster but also some for the heating element that seals the bags.
 
I never understood measuring the capacity of a machine by the amps it draws. That totally bypasses the efficiency, quality, and effectiveness of said machine.
As to the vacuum sealers, I have and have had several. They work GREAT while they are new. However, most made for home use are cheaply made, and will only last you a year or two at most before they start giving you trouble.

Some things that I have found:
The seals where the bag clamps to vacuum it out are weak. They tend to pull out of their grooves, and tear easily. They are replaceable, not too expensive, but a PITA to deal with.

The vacuum pumps are not made for the long term. They wear quickly, and get low and weak. Not replaceable.

The sensor that turns off the pump and starts the sealing heater is prone to failure. When that fails, the whole machine is scrap.

The heater that seals the bag is just a piece of "heater wire" taped to the body of the machine. Heat is not consistent and even across the seal area. Sometimes leaves gaps in the sealed area. Again, not replaceable.

As a general rule, the available replacement parts are a few gaskets and seals, but NO internal parts.

My recommendation is to spend more money and get a commercial level vacuum sealer. It will do a better job, uses less expensive materials, and will last a lifetime as compared to the ones made for home use.
 
Check out weston vacuum sealers. They are expensive but they sell replacement parts for them. After 8 years I had to replace the vacuum switch (trigger for the heat seal) and put in new seals this year. For the use it has had I am happy with it but happier that they sell reasonable replacement parts so its not a throwaway machine.
