color coded wire

I save wiring harnesses from vehicles we part out, and even wiring harnesses that get replaced because part is damaged, if the customer elects not to take them with.

Unwrap them, and they are a great source of wire of all colors and gauges, for repairing other vehicle wiring.

Like you, when I salvage washers, dryers,refrig and AC's I save all the wire, switches, thermostats, fuses, capacitors. I even find extension cords to be a great source of wire. Have boxes of used parts and wire. Cost nothing.

Local auto parts stores should all have it. Just because a particular color or gauge is not on the shelf does not mean they can't get it. Ask them to order what you want or need.
 
I'v seen there's NAPA, and then there's a better NAPA, and then there's a better NAPA... we had a mediocre one, now we have a great one, they can get anything. I think it depends on the owners of the particular NAPA as to how good it is.
 
If your needing nothing but 'primary' colors like red, green, white, black, yellow, etc, most auto parts houses can get that for you. If your looking for color coded in the way of stripes, etc then you'll need somewhere like Waytek at the link below. They cab custom make just about anything you want, but the only problem is there is going to be a fairly large minimum run of it.

Beyond that, the other replies pretty much have the best ways to come up with color coded stuff covered.
