We now have a farmers market in town, can get fresh vegetables,(not shipped from Mexico)The farmers give such large portions that wife would like to freeze some Could someone tell us how you do it. We can"t have our own garden as we have too much shade. Our sole product is maple syrup. Any help would be appreciated.

My "Ball Canning Book" says wash, remove the ends and cut (snap) beans to size. Get a pot of water boiling. Put the vegetables in--I use a deep fry basket--for three minutes. Remove beans and plunge into ice cold water. This stops the cooking process. Once cooled pack vegetables into serving-size bags and freeze.

My self I can them and also pickle them but as the one guy say the Ball booking of canning say just as he said. This year I have canned beans and made 3 bean salad and also dilly beans

Another option after blanching is to lay them separate on a cookie sheet on wax paper and freezr them. then gather them into serving sized zip lock and or vacuum seal. they are then not frozen into a mass with excess water, and can be aprcelled out as needed. Jim

Disregard 300. I cut mine to size and par boil for about 2 minutes. Drain and place beans in cold water until cool. Drain and spread on a cookie sheet (parchment paper keeps them from sticking to the sheet) and put in the freezer until frozen. I then vacuum wrap them. They will keep up to a year and taste like fresh beans. Freeze about 25 gallons of beans each year.
