My 2 1/2 cents worth.

I believe you get a better finish with hardener, but my dad got great finishes with the old synthol enamel. I do not know if the hardener helps with UV filtering.

I had childhood asthma real bad, and will get it occasionally now. I will wheeze up a little just being around fresh paint with hardener. I use breathing air and keep the air on until everything is cleaned up and I am completely out of the area. I do not go back into the area for several hours without the air on

I do know that hardener is required with enamels, but have heard mixed stories on urethane. I welcome feedback on this.
 
Hardener is not required with enamels. The paint just takes longer to cure and is not as sun and gasoline resistant.
Hardener will make it chip easier when reassembling. I used it on our dump truck and the gravel that falls off when loading chipped it a lot worse too.
 
My experience with hardner in alklyd enamel is the paint doesn't fade nearly as quick. With clear coat with uv protection using a catalyst the shine is more and much easier to obtain, but will chip much easier. The "better" the paint and clear coat the easier it chips. The old imron of past was in my opinion the best paint ever. A car I painted 20 years ago still looks like it just came out of the paint booth.
 
i think you got it backwards.

hardner is optional with enamil.. and many ( all? ) urethanes need an activator.
