looks like a big crop of potatoes this year. how do do you store potatoes? have heard of spreading lime on them to preserve, sounds messy. i have a refrigerator available, can i store fresh taters in a refrigerator long term?
 
I think the refrigerator would turn out to be a bad idea. Think about the situation like this. Potatoes, once dug, are starting to decompose. They will transpire moisture, and heat, similar to grain. Potatoes have to have ventilation ,to remove the moisture they give off. Kept in a cool dark place, where they will not freeze. A old farm house cellar is ideal. As a kid our "potato bin" had a dirt floor, and the spuds were piled about two feet deep, and covered with hemp sacks. Hope this helps, Bruce
 
Refrigerated potatoes do not store real well, and the flavor is greatly reduced when stored in a regular refrigerator. A good cool basement works best.
 
This very problem is a big part of why I want to build a good sized root cellar. 50 lbs of seed can giver you 500 lbs or more of product. Where do you store 1/4 - 1/2 ton of spuds?!!!
 
I use a dark cool corner of a basement. Once spring comes and before the taters start to sprout, we can as many as we need to get us through the summer until the new crop. We also make as many as we can fit into the freezer into french fries and vacum pack them.

Canned taters are virtually identical to boiled.
