I use a dark cool corner of a basement. Once spring comes and before the taters start to sprout, we can as many as we need to get us through the summer until the new crop. We also make as many as we can fit into the freezer into french fries and vacum pack them.
Canned taters are virtually identical to boiled. A quart of canned taters, a quart of canned meat, the veggie of your choice and Viola! A first class meal in 15 minutes.
